Baked Stuffed Jalapeño

Ingredients to make Baked Stuffed Jalapeño

  • Jalapeño – 6
  • Boiled potato – 1 large or 2 medium
  • onion – 1
  • ginger – 1/2tspn
  • lemon juice – 1 to 2tspn
  • green chilly – 1
  • coriander leaves – 2tspn
  • mustard seeds – few
  • turmeric powder – a pinch
  • salt – according to taste

How to make Baked Stuffed Jalapeño

  1. Cut jalapeños length wise and remove seeds and membrane. Set aside.
  2. In a heavy bottom non stick vessel add few tspns of oil. When heated add mustard seeds. Once it crackles add finely chopped onion, potato cubes, green chilly slices, finely minced ginger pieces and finely cut potato cubes. Fry on medium to low flame for 5 minutes. Add turmeric and salt. Mix well. Add coriander leaves and lemon juice.
  3. Mix well and cook for further two minutes. Check seasoning and adjust accordingly.
  4. Once potato stuffing comes to room temperature mix well. Take lemon size stuffing and press together tightly and generously stuff the jalapeños. Repeat for the rest. Refrigerate for 30minutes.
  5. Pre heat oven to 190°C for 15minutes. Line a parchment sheet on baking tray and arrange stuffed jalapeños. Bake for 20 minutes to 25 minutes.
  6. Serve hot.

My Tip:

You can spray cooking oil before baking. Adjust spices according to one’s preference. Add cheese for extra flavour.
