ABOUT Dal Makhani RECIPE

Dal makhani is a popular dish from punjab , North India..The basic ingredients are whole black lentil ,butter or ghee and cream..For getting authentic restaurant style taste and flavour of dal makhni you have to dhungar or charcoal method .

Ingredients Serving: 5

  1. Whole black lentil / akka urad dal - 1 1/2 cup
  2. Red kidney beans- one handful
  3. Onion - 1 Large
  4. Ginger +garlic paste - 1 1/2tsp
  5. Tomato - 2
  6. Ghee or butter - 2 tbsp
  7. Cinnamon- 1/2 inch stick
  8. Green cardamom- 2 -3
  9. Cloves - 4
  10. Bay leaves- 2
  11. Garam Masala Powder- 1tsp
  12. turmeric powder- 1tsp
  13. Chili powder- 1/2 tsp
  14. Cumin Powder- 1tsp
  15. Coriander powder- 1tsp
  16. Salt as required
  17. Sugar - 1/2 tsp
  18. Kasuri methi - 1tbsp
  19. Fresh cream - 5 tbsp
  20. Coriander leaves for garnishing

Instructions

  1. Wahed black lentil properly..then soak dal for overnight.
  2. Then pressure cook black lentil with 1 cup water and salt to taste. Wait for 2-3 whistles then simmer gas for 6-7 mins..
  3. Then turn off Gas..allow to release pressure..
  4. Now heat a pan with 2 tsp oil .add sliced onion. Fry till light brown. Then add ginger garlic paste and stir it for a minute.
  5. Then add chooped tomatoes ,add little salt , 1/2 tsp each turmeric and Chili powder .cook tomatoes till soft..
  6. Now turn off Gas.. let the onion tomato masala little cool
  7. Then put the masala in a blender,add little water and blend till smooth.
  8. Now heat a pan with ghee and 1 tbsp oil..add all whole spices..once you get a nice aroma.
  9. Pour the blended onion tomato masala.add little turmeric,Chili,Cumin and coriander powder ,sugar and salt to taste
  10. Give a nice stir to mix well everything..
  11. Now add boiled dal..stir well to mix dal with onion tomato gravy.
  12. Once it starts bubbling,simmer it for 5 mins..
  13. Then add garam masala, fresh cream and crushed kasuri methi..check seasoning.
  14. Now heat a charcoal on direct flame till red hot.
  15. Now a take small bowl .keep red hot charcoal inside the bowl.
  16. Place the bowl Inside the dal makhani pan..pour 1 tsp ghee over hot charcoal. Immediately cover pan with lid for 1 min for infused the smoke in dal makhani.
  17. Ready restaurant style Dal Makhni...serve it with naan /paratha / ruti and salad.
