ABOUT Fromage (Paneer n Cheese) Cocktail Herby Twist Balls RECIPE

This is an excellent convenient and tempting Tapas starter to go with Beer n Drinks. Very simple dish, yet you can give as many twist to make it interesting and Delectable.

Ingredients Serving: 6

  1. I). Ingredients for balls
  2. 2 litres milk
  3. 2 Lemon
  4. 2 tbsp of sour cream or goat cheese or Feta cheese
  5. Fresh Herbs: 2 to 4 twigs each of parsley, coriander, mint, chives, rosemary
  6. 1 tsp each of Flax seeds, Cumin seeds, pumpkin seeds Salt, cumin powder, oregano
  7. 1 tbsp each of Chopped carrot, finely chopped green chillies n ginger
  8. II). Ingredients for filling
  9. Few cherry tomatoes
  10. Few Jalapeño
  11. Few olives
  12. Mixed assorted party nuts
  13. Minced chicken or tunna
  14. III). Ingredients for topping/rollart
  15. Grounded Flax seeds and grounded roasted black sesame for: Black Grey balls
  16. Mixed herbs: thyme, parsley, celery n basil finely chopped: green balls
  17. Crushed party snacks and pumpkin seeds: nutty ball
  18. White roasted sesame seeds: white balls
  19. Crushed Spicy Nachos: orange red balls
  20. Garnishing Party picks, basil leaves, olive, jalapeño, crushed nuts for garnishing and pick

Instructions

  1. Bring the milk to a boil, add all the ingredients of the balls given above (except lemon juice and cheese/cream) once the boil is almost there
  2. After the boil or 1 min, the milk itself will start curdling as the ingredients added have their own acidity
  3. Add required amount of lemon juice to make it curdled completely
  4. Immediately switch off the flame or this flavored Masala cottage cheese will turn chewy or goes.
  5. Place a fine mesh strainer and line it with muslin cloth.
  6. Pour the curdled mixture into the muslin cloth.
  7. Gather the corners and twist the top gently to form the cheese into a round ball
  8. Place in the fridge or bring it to the room temperature.
  9. Now add sour cream or cheese
  10. Mix well and again keep it covered in the muslin cloth.
  11. Now, take this mix and spread in palms
  12. Fill in cherry tomatoes in few, or jalapeño or chicken filling and cover from the other side and roll in hands to make the balls.
  13. We will make some with fillings and some plain without any filling.
  14. Next, we will separately scatter the different rollords or topping mix in bowls
  15. Roll the balls in different toppings.
  16. The twisted balls will look beautiful in different colours, texture n inviting flavors.
  17. In a picker, layer basil leaves or jalapeño or olives and prick in the balls.
  18. Scatter basil leaves, jalapeño, party nuts, herbs on your plated dish and place these Different colored balls.
  19. These Meltin, soft, nutty, Flavored balls makes an awesome Tapas
