Chicken cashew curry

Ingredients to make Chicken cashew curry

  • 500 grams chicken boneless
  • 2 potatoes- quartered
  • 1 whole onion grinded and made a paste
  • 2 tsp ginger - garlic paste
  • 1 cup cashews grinded and made a paste
  • 4-5 green chillies
  • 3-4 star anise
  • 8-10 garlic cloves finely chopped
  • 2 tsp coriander powder
  • 2 tsp lemon juice
  • 2 cup water
  • 1 tbsp oil
  • salt to taste
  • Seasoning ingredients:
  • 5-6 cashews
  • 1 tsp refined oil
  • Handful of coriander leaves finely chopped (optional)

How to make Chicken cashew curry

  1. Wash and marinate the chicken pieces in a mixture of salt, lemon juice and ginger-garlic paste.
  2. Grind the green chillies and onion to make a paste. Also grind the cashews separately and keep it aside.
  3. Heat oil in a pressure cooker, once the oil is hot add in the chopped garlic, coriander powder, onion -green chilli paste and saute it.
  4. Add in the marinated chicken pieces and fry for 2-3 minutes. Next put in the potatoes and continue cooking for another 2-3 minutes.Then put in the cashew paste along with salt and water.
  5. Cover the pressure cooker and cook it till 4 whistle blows. Then switch off the flame and let it cool down.
  6. Take a pan and heat oil, then put in the seasoning ingredients, cashews ,chopped coriander leaves and stir fry for a minute.
  7. Then pour in the cooked chicken curry and stir well.
  8. Serve hot alongside rice for best taste.
