Gajar Halwa

Ingredients to make Gajar Halwa

  • carrots- 1kg
  • Milk (whole/reduce fat)- 1/4 cup
  • Unsalted butter/ghee- 1/4 cup
  • almond(soaked.& sliced)- 10-12
  • cardamom powder- 1/4 tsp
  • Ricotta cheese- 1 cup
  • raisins- 10(soaked)
  • cashew nuts- 10-15
  • sugar- 2 cups to taste

How to make Gajar Halwa

  1. Heat pan add butter and fry cashew nuts,take out keep aside..in same pan add washed, peeled & grated carrot..saute for around 5 mins.
  2. Add milk in it and mix properly, cover for 5-7 min on low /med.heat..uncover add ricotta cheese almond, cashewnuts & raisins.
  3. Mix properly, cook on med heat till ricotta cheese moisture evaporates, now add sugar & cook till you get desired consistency.
  4. It will take around 10-15.min.add cardamom powder, turn off heat.

My Tip:

instead of Ricotta cheese,you can use khoya.
