ABOUT Bhuna Gosht RECIPE

Delicious slow cooked mutton in masalas and spices. Mutton is first cooked and brown in its own juices and then add water little at a time Sonia doesn't get burnt and stick to the pan. It is little time consuming but the end result is amazing with beautiful flavour.

Ingredients Serving: 4

  1. Mutton - 500 gms
  2. Kashmiri red chillies - 3 broken 
  3. Cumin seeds - ½ tsp 
  4. Cinnamon - 1 inch
  5. Cardamom - 3
  6. Cloves - 4 
  7. Star anise - a small piece 
  8. Bay leaf - 1 small 
  9. Asafoetida - ¼ tsp 
  10. Ginger garlic paste - 1 tbsp 
  11. Onion - 2 chopped 
  12. Tomatoes - 1 large chopped 
  13. Dry red chilly - 5-6 grounded 
  14. Turmeric powder - 1 tsp 
  15. Roasted coriander powder - 1 tbsp
  16. Roasted cumin powder - ½ tsp  
  17. Garam Masala Powder - 1 tbsp 
  18. Fennel powder - ½ tsp 
  19. Pepper powder - ½ tsp 
  20. Ginger powder - ½ tsp (optional)
  21. Curd - 3 tbsp 
  22. Few chopped coriander leaves 
  23. Oil - 3 tbsp 
  24. Salt to taste 
  25. Water as required 

Instructions

  1. Heat oil in a pan. Add the whole spices and let it splutter. Add the asafoetida and saute for a min. 
  2. Add ginger garlic paste and saute for a min. Add chopped onions and saute till it brown. Add chopped tomatoes and saute till it turns mushy. Add the masala powder and saute for 2 mins. 
  3. Add the mutton and curd and give a nice stir mixing well with the masala. 
  4. Cover the pan and cook without adding water on low-medium heat stirring in between the cooking. 
  5. Once the water released by mutton evaporates completely just sprinkle water little at a time and cook the mutton untill the mutton is cooked completely. At this stage constant stirring is required. Mine took approximately 1½ hour.
  6. Add chopped coriander leaves, give a quick stir and take off the heat.
