Ingredients Serving: 3

  1. 1½ cups All Purpose Flour
  2. ½ cup Oats powder
  3. 1½ cups Icing sugar
  4. ¾ cup Custard powder, I used mango flavoured
  5. ½ tbsp. Baking powder
  6. ½ cup Butter, room temperature
  7. ¾ cup Milk, room temperature
  8. 1 tbsp. Vanilla essence
  9. 2 tbsp. coloured Coconut flakes

Instructions

  1. Line silicone muffin mould with paper cases and set aside. If not using paper cases then gently brush butter and dust with flour the silicone muffin tray.
  2. Sift flour, oats powder, icing sugar, baking powder and custard powder all together for 2-3 times. This process is just to incorporate everything together.
  3. Combine butter, milk with vanilla extract. Now slowly fold in the sifted flour.
  4. Pour the batter into paper cases or greased and dusted muffin tray up to ¾ of its size. Sprinkle coloured coconut flakes. Tap around to make sure the batter is scattered evenly.
  5. Microwave on high for 1 or 1½ minutes or until the toothpick/skewer comes out clean.
  6. Leave the muffins in the microwave for another 1 minute before taking out.
  7. Leave it to cool for 2-3 minutes and then remove from silicone mould and place on cake wire stand to cool completely.

Can I use Cornflakes in place of Oats ?

If i want to make at least 6 pcs, do i need to alter the quantity? Coz I feel this quantity can yield more than 3...feeling confused
