Ingredients to make Paan ice cream

  • 1/2 L milk (use ful fat)
  • 2 cups fresh cream
  • 2 cup whipped cream ( optional)
  • Condensed milk ( optional)
  • 1 1/2 cups sugar (or as per ur taste )
  • For the paan flavouring : 6 maghai paan patta or betel leaves.
  • 1/2 cardamom (elaichi) powder
  • 1.5 tbsp fennel seeds (saunf) powder
  • 4-5 tbsp paan masala
  • 1/4 cup gulkand
  • Dried cherry

How to make Paan ice cream

  1. To make the paan flavouring:
  2. Wash the paan leaves.
  3. Add the leaves and all other ingredients to a blender and grind them up with some milk till its get fine paste. And keep aside.
  4. To make the ice cream base: In a bottom pan, add the rest milk and bring to a boil. Add the sugar and simmer for 30 minutes in high flame.
  5. Remove from flame and put it in the fridge for 30-40 mint.
  6. To make the paan ice cream: once the milk is completely cool ,take it out of the fridge.
  7. Add the paan mixture , fresh cream , whipped cream and condensed milk to the milk and mix with hand mixture.
  8. Mix well and pour into a shallow dish. Put in the freezer for about 2 -3 hours till slushy.
  9. Now, take out from the freezer and beat with a whisk until smooth and creamy.
  10. Freeze for 7-8 hours or overnight.
  11. Top with cherry bits gulkhand. And serve it.

My Tip:

You can use green food color.
