Ingredients to make Fluffy Corn Muffins

  • 2 Eggs
  • 1 and 2/3 cup of all purpose flour(maida)
  • 1 1/2 tbsp baking powder
  • 1/2 tsp Salt
  • 2/3 cup corn meal( yellow corn flour)
  • 1/2 cup Sugar
  • 1 cup milk
  • 2 tbsp olive oil
  • 1/4 cup butter

How to make Fluffy Corn Muffins

  1. Preheat oven 350 F
  2. Whisk flour, cornmeal, baking powder and salt in a mixing bowl.
  3. In a large bowl with a hand mixer blend butter and sugar until creamy. Add milk and oil and blend again.Add two eggs and slowly mix it.
  4. Slowly add dry mixture to the wet mixture ans incorporate nicely.
  5. Use greased muffin tin or line up with cupcake liner and pour muffin mixture into 2/3 of muffin tin. Bake for 18- 20 minutes until muffins are lightly golden brown. Enjoy.
