Ingredients to make Luscious Lemon yogurt cake

  • maida 1.5 cup
  • curd 1 cup
  • Granulated sugar 3/4th Cup
  • Baking powder 1.5tsp
  • baking soda 1tsp
  • lemon zest 1 tsp (1lemon approx)
  • lemon essence 1 tsp
  • For Frosting:
  • Rich dairy free icing cream 1 cup
  • lemon zest 1.5 tsp
  • lemon essence/yellow color 1.5 tsp

How to make Luscious Lemon yogurt cake

  1. Sift maida & baking powder
  2. Take curd and granulated sugar in a bowl and mix well till the batter become smooth
  3. Now add lemon essence and lemon zest and baking soda.
  4. Now let it rest for five minutes to activate baking soda in curd sugar mixture.
  5. Now add dry sifted Maida mixture In curd mixture slowly and mix it.
  6. Grease the baking tray with butter and sprinkle some Maida. Pour the mixture into the greased baking pan.
  7. Now put the cake in pre heated oven for 20-25 min. Note oven should be preheated @180°c for 10 mins..
  8. After 20 mins ,take a toothpick and put it in the cake to check if it is cooked.if the toothpick comes out clean It means cake is ready.
  9. Note :Wrap the cake tin with damp cloth to get flat cake top.
  10. Let the cake cool down. Invert the cake on flat bottom/plate for frosting.
  11. Divide cake into three equall portions and add sugar syrup on each base. Now add frosting.
  12. For frosting:
  13. Beat the cream for around 15 mins.
  14. Once the cream is fluffy,divide it into two portions.
  15. Add yellow color /Lemon zest in one portion.
  16. Now place the frosting on cake and let it cool down for 10 minutes.
  17. Your lemony cake is ready to eat.

My Tip:

Wrap the cake tin before baking with damp cloth for flat cake top.
