ABOUT Vegetarian Khow Suey RECIPE

This burmese dish is a burst of flavours in your mouth with each spoonful. A savoury dish khow suey is very delicious and popular amongst all.

Ingredients Serving: 4

  1. Noodles -250 grams
  2. Babycorn -5 to 6 ( diced)
  3. Carrots - 2 (medium size, peeled and sliced)
  4. Brocolli - 100 grams ( only florets)
  5. Zucchini - 1 (medium size , sliced)
  6. Onions - 3 (medium size)
  7. Garlic - 10 to 12 cloves
  8. Ginger - 2 inch piece
  9. Lemon grass stalk -2 inch piece( finely chopped)
  10. Gram flour- 2 tablespoon
  11. Turmeric Powder - 1/2 teaspoon
  12. Sugar - 1 teaspoon
  13. Crushed black pepper- 1/2 teaspoon
  14. Coconut milk - 1 cup ( I used Daburs tetrapack)
  15. Refined Oil - 2 tablespoons.
  16. Water -3 cups( for the gravy ) and additional for boiling the noodles
  17. Salt to taste

  19. Browned onions ( sliced) - 1/4 cup
  20. Chopped Fried Garlic- 1/4 cup
  21. Redchilli flakes - 2 teaspoons
  22. Lemon wedges - 4 to 5
  23. Chopped coriander - 1/4 cup
  24. Roasted and crushed peanuts -1/4 cup
  25. Red or green chillies ( chopped) - 1 tablespoon ( optional)

Instructions

  1. Heat sufficient water in a deep pan and bring it to boil.
  2. Add noodles and cook for 2 to 3 minutes.
  3. Strain and keep aside in a bowl until required.
  4. Grind together raw onion , garlic ginger , lemon grass and turmeric into a very fine paste .
  5. Heat oil in a seperate pan .
  6. Add the ground paste and saute well .
  7. Add the gramflour and mix well and saute for 4 to 5 minutes.
  8. Add 1 cup water and mix well using a whisk.
  9. Add babycorn ,carrots and bring to a boil.
  10. Add broccoli and zucchini and the Coconut milk and more 2 cups of water and cook for 3 to 4 minutes .
  11. Add salt ,sugar and crushed black pepper and bring to a boil.
  12. Remove from heat and keep aside until serving.

  14. Place the boiled noodles in each serving bowls.
  15. Add the prepared gravy to the bowls with noodles.
  16. Each one can top it with the condiments of one's liking ..... browned onions , fried garlic chilliflakes ,crushed peanuts .chopped redchillies.
  17. Drizzle some lemon juice garnish with coriander leaves .
