Originally i got this recipe from the Great Kaveri Obhlan.. And if we think about yellow color the first thing that comes to the mind is Mango. Summers are here and a mango dish is always welcomed. Here's presenting my mango semolina cake.

Ingredients Serving: 4

  1. Mango Safeda - 1
  2. Semolina - 3/4 cup
  3. All purpose flour - 3/4 cup
  4. Milk 1/4 cup
  5. Sugar 1 1/2 cup
  6. Curd 1/2 cup
  7. Baking soda - 1 tbsp
  8. Baking powder - 1 tbsp
  9. Oil 1/4 cup
  10. Yellow edible color 1/2 tbsp
  11. Pistachios 6-8 for garnishing
  12. Almonds 6-8 for garnishing

Instructions

  1. In half cup curd, add 1 tbsp baking soda. Mix well and keep it aside for 5 minutes. The curd would rise double to its quantity
  2. In the mean time, peel the mango and cut into pieces
  3. In a pan, add mango pieces, sugar and 1/4 cup milk. Grind it. It will become a mango puree, make sure that no chunks remain in the puree
  4. Now add 1 tbsp baking powder, 1/4 cup oil, yellow food color in mango puree. Mix it well.
  5. Add the risen curd in it and mix well for 2 minutes. Add semolina and all-purpose flour in it. Mix fast and well so that no lumps formed.
  6. In the meantime, place the pressure cooker on the gas and add some sand in it
  7. Put on the flame and on low temperature let it be heated
  8. Now grease the baking bowl and pour the batter in it
  9. Place the baking pan into the pressure cooker. Remove the whistle of the pressure cooker and cover the cooker with lid.
  10. On low to medium flame, bake it for 45 minutes.
  11. Check it with tester, if it comes clean then off the flame
  12. If it is still sticking, then let it be baked for 5-7 minutes more.
  13. Take out the baking pan from the cooker. Allow it to cool
  14. Demould it and let it come to room temperature
  15. Slice it and serve it with tea, coffee or any beverage.
