Ingredients to make Jen's Lemony Yogurt Bread

  • 1-1/2 cups Gluten Free 1 to 1 flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 large egg
  • 1 cup (8 ounces) lemon yogurt
  • 1/2 teaspoon lemon peel
  • 1/3 cup vegetable oil
  • 1 tablespoon lemon juice **see note**

How to make Jen's Lemony Yogurt Bread

  1. In a large bowl, combine the flour, sugar, salt, baking soda and baking powder. In another bowl, combine the egg, yogurt, lemon peel, oil and lemon juice. Stir into dry ingredients just until moistened.
  2. our into an 8-in. x 4-in. loaf pan coated with cooking spray. Bake at 325° for 45-50 minutes or until a toothpick inserted near the center comes out clean.
  3. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf (12 slices)
My Tip: can use 1 tablespoon of Limoncillo instead of lemon juice - as it makes for a deep rich favor
