ABOUT Schezwan Sauce RECIPE

Schezwan Sauce is a style of Chinese Cuisine which has bold flavours specially the pungency & spiciness resuting from liberal use of GARLIC & RED CHILLIES.

Ingredients Serving: 4

  1. 4-5 Kashmiri Red Chilies (Soaked & Paste)
  2. 4-5 Byadagi Red Chilies (Soaked & Paste)
  3. 15-20 cloves Garlic (finely chopped)
  4. 1 inch piece Ginger (finely chopped)
  5. 2-3 Green Chilies (finely chopped)
  6. 1 Tbps Cilantro Stems (finely chopped)
  7. Salt (as per taste)
  8. 1/4 tsp Sugar
  9. 1 tsp Soya Sauce
  10. 1 tsp Vinegar
  11. 1 Tbps Tomato Ketchup
  12. 1/2 Cup Water (for cooking & soaking)
  13. 2 Tbps Cooking Oil (Healthier Version: Olive Oil)

Instructions

  1. Soak both the Red Chilies in hot water for 30-mins and then grind them in a thick Paste. Keep a side.
  2. Heat a Pan, add Oil, once the oil is hot, add: Garlic and let it cook for some seconds till it is golden brown.
  3. Add Ginger & Green Chilies & sauté them for some seconds.
  4. Add Red Chilies Paste and cooking it for 5-min or until it starts leaving oil from the sides of the pan.
  5. Then, add Salt, Sugar, Soya Sauce, Vinger & Tomato Ketchup & cooking for another 2-mins.
  6. Add Cilantro stem & cook for 1-min.
  7. Then, add Water & cook for another 3-4mins (Adjust the consistency as per requirement).
  8. SCHEZWAN SAUCE is ready to serve or can be used in other Chinese recipe like Schezwan Noodles, etc. or can be Refrigerate for 2-weeks in a air tight container.
