Beetroot rice

Ingredients to make Beetroot rice

  • Basmati Rice 1 and 1/4 cup
  • Grated beetroot 1 cup
  • Finely chopped onions 3/4 cup
  • Cumin seeds 1 teaspoon
  • Bay leaf 1
  • 1 inch cinnamon sticks, 2
  • Cloves 3-4
  • Green chillies 2-3
  • Sambhar powder 1-2 teaspoon
  • Oil 1 tablespoon
  • Salt to taste
  • Fistful of finely copped coriander leaves for garnish

How to make Beetroot rice

  1. Clean, wash and soak basmati rice as per packet instructions.
  2. Drain and keep it aside.
  3. Heat the oil in a pan, add cumin seeds.
  4. As they crackle add cinnamon, clove, and bay leaf.
  5. Saute on medium flame for a minute.
  6. Add finely chopped onions and chopped green chilies.
  7. Saute them on medium flame till the onions turn translucent.
  8. Next add grated beetroot, rice and saute for few seconds.
  9. Add sambhar powder, enough hot water as per rice packet instructions
  10. Mix everything well and cover the pan, cook it on medium flame.
  11. Add salt to taste and stir it
  12. Cover the pan again to continue with cooking on low flame till the rice is done
  13. Delicious Beetroot rice is ready.
  14. Serve it warm with plain curds or raita of your choice.
