ABOUT Chicken Tikka Masala RECIPE

A creamy and spicy chicken tikka masala, to be served with roti or naan.

Ingredients Serving: 4

  1. Boneless Chicken Breast/Thighs – 1 pound
  2. Yogurt – 2/3 cup
  3. Ginger Paste – 2 tsp
  4. Garlic Paste – 2 tsp
  5. Garam Masala – 2 tsp
  6. Red chili powder - 2 tsp
  7. Vinegar – 2 tbsp
  8. Peanut Oil – 2 tbsp( or any Vegetable oil)
  9. Cilantro Stalks – ½ cup, finely chopped
  10. Pam Spray – as required
  11. FOR THE SAUCE
  12. Onion paste – 2/3 cup
  13. Garlic – 11/2 tbsp, minced
  14. Ginger – 1 tsp, minced
  15. Tomato Puree – 2 cups (Homemade)
  16. Tomato paste – 1 tbsp
  17. Coriander Powder – 2 tsp
  18. Cumin Powder – 2 tsp
  19. Garam Masala – 2 tsp
  20. Nutmeg powder – ½ tsp
  21. Kashmiri Chili powder – 2 tsp
  22. Red Chili powder – 1 tsp
  23. Bay Leaf – 1
  24. Cinnamon Stick – 1 inch
  25. Sugar – To Taste
  26. Salt – to taste
  27. Butter – ½ cup
  28. Cashew paste – 2 tbsp( optional)
  29. Heavy Cream – ½ cup +1 tbsp for garnish
  30. Kasoori Methi – 11/2 tbsp (Dried Fenugreek Leaves)
  31. Cilantro – 2 tbsp, finely chopped

Instructions

  1. Make a marinade using all the ingredients in the first block.
  2. Cut the chicken in bite sized pieces.
  3. Mix all the ingredients of the marinade and coat the chicken with it. Let it rest 4-5 hours or overnight.
  4. Next morning, put the meat pieces in skewers, spray a thin film of oil (Pam) and grill either on an open frame or under the broiler for about 5 minutes on each sides and until they look a little charred.
  5. Keep aside
  6. For the Sauce
  7. In a pan, heat the butter and add the Bay Leaf and cinnamon stick.
  8. Throw in the onion, garlic and ginger. Stir until the onion look translucent.
  9. Add the tomato puree, tomato paste and the cashew paste. Stir and let it cook for 4-5 mins.
  10. Add in the spices, chicken, sugar and salt to taste. Stir to mix . Let this cook for 4-5 mins. Cover it and stir periodically.
  11. Add the heavy cream and stir and let it cook for 2 minutes.
  12. Remove from the stove and add the kasoori methi and cilantro. Mix everything in.
  13. Serve in a dish and add the tablespoon of cream on top for garnish.
  14. This dish best goes with white rice and naan.
