Tomato thoku / pickle

Ingredients to make Tomato thoku / pickle

  • Tomato 1kg to 1 1/2 kg. Try to buy rich red in color.
  • Oil 1/4 cup ginger oil
  • Mustard seeds 1 tbs
  • Salt as per the taste.
  • Turmeric powder 1/2 tbs.
  • Kashmiri red Chilli powder 2 tbs.
  • Hing 1/2 tbs.
  • Dry powder:
  • Coriander seeds 1 tbs
  • Red Chilli 4 to 5
  • Seasame seeds 1 tbs (white)
  • Dry roast All the things given above and grind it coarsely.
  • Add tomatoes into blender and puree and keep aside.

How to make Tomato thoku / pickle

  1. In a pan add generously oil add mustard seeds
  2. Once seeds get crackle add this tomato puree and mix well
  3. Add salt ,turmeric powder, hing , kashmiri red Chilli powder, and mix well .
  4. And close the lid.
  5. Cook for 20 mins until simmer.
  6. Once it's get or looks like a thick pickle or thoku
  7. add that dry powder 1 to 1 1/2 tbs
  8. And cook for 10 mins in simmer.
  9. Finally add some gingerally oil or seasame oil. Off the flame .
  10. Keep it cool and store in air tight container.
