ABOUT CHICKEN CURRY ODIA STYLE RECIPE

Chicken Curry is probably one of the most googled recipe. Everybody has a version of his/her own. And everybody tries to improvise it in his/her way till satisfaction is achieved. Undoubtedly, it tops the list of comfort food. A bowl of chicken curry and a plate of steam rice can become your soul food.

Ingredients Serving: 6

  1. 1 kilo chicken cut into medium to small size pieces
  2. 1 tsp turmeric powder
  3. 1 tsp red chili powder
  4. 1 tbsp salt
  5. 1 tsp Ginger garlic paste
  6. 3 Tbsp Mustard oil
  7. 1 tsp sugar
  8. 2 bay leaf
  9. 3 Green Cardamom
  10. 1 star anise
  11. 4 cloves
  12. 4 whole black pepper
  13. 1 small onion cut into julians
  14. Make a paste of 3 green chilies, 2 tbsp garlic , 3 onions and ½ inch ginger
  15. Make a puree of 6 tomatoes
  16. 1 tbsp garam masala powder
  17. 1 Cup water
  18. What You Need For The Garnish:
  19. 2 smal tomatoes cut into thin slices
  20. 2 tbsp coriander leaves chopped
  21. 2 green chili finely chopped
  22. Juice of 1 and 1/2 lemon

Instructions

  1. Marinate chicken with turmeric powder, red chili powder, salt and ginger garlic paste.
  2. Keep it marinated for 30 minutes.
  3. Heat oil in a pressure cooker till it reaches smoking point.
  4. Reduce flame and add sugar to it. It gives a nice color to the gravy.
  5. Add all the whole spices and onions cut into julians.
  6. Cook till onion turns golden pink.
  7. Add onion paste and cook till it turns brown and the raw smell is gone.
  8. Next pour the tomato puree and cook till the raw smell is gone.
  9. This is going to take time. Cook in low flame so you don’t burn the spice paste.
  10. Add the marinated chicken and mix everything well. Let the chicken cook in the spice mix for 10 minutes on low flame.
  11. Add water, check seasoning and add garam masala powder.
  12. Close the lid and cook on high flame for 3 whistles. Lower flame and cook for another 2 minutes.
  13. Switch off flame and allow pressure to drop.
  14. Garnish with tomatoes, lemon juice, coriander leaves and green chilies.
  15. Serve with rice and roti.
