When you think of incorporating Red color in your plate, the first two names comes to your mind is BEETROOT AND TOMATO. so friends here I have added Masoor daal too which is from red family and a very good source of protein too. Beetroot is a very good source of Iron but Kids does not prefer it's taste very much. So Here is a Soup which your kids will just Love.

Ingredients Serving: 3

  1. Beetroot 1 (washed, peeled and chopped in cubes)
  2. Bottle gourd ( chopped 1/2 cup, standard tea cup, no need to peel)
  3. Tomato 1 big.
  4. Onion 1 small
  5. Garlic crushed 1/2 tsp
  6. Ginger grated 1/2 tsp
  7. Masoor daal 1 tbsp
  8. Olive oil / butter 1 tsp
  9. Salt to taste
  10. Roasted Zeera powder 1 tsp
  11. Pepper powder 1/2 tsp ( to taste)
  12. Bay Leaves 1
  13. Lime juice of 1 lemon
  14. Sugar 2 tsp
  15. Coriander leaves finely chopped 1 tsp

Instructions

  1. Heat oil / butter.
  2. Add bay leaves ( tear in small pieces), saute and as it changes color take it out.
  3. Add chopped onion, saute a little, add garlic crushed, ginger grated.
  4. Add tomatoes chopped.
  5. Now turn the gas off. Pressure cook Beetroot, gourd, washed Masoor daal and all the sauted masala for 5 to 6 whistles depending upon the size of your chopped cubes of Beetroot and gourd.
  6. Cool the mixture and blend it.
  7. Now boil it by adjusting salt, pepper, Zeera powder.
  8. Add bay leaves and sugar according to your taste.
  9. Boil a little, turn off the flame. Now add lime juice.
  10. Serve with garnish of coriander leaves.
  11. Enjoy this healthy and yummy soup with garlic bread/ toast butter.
  12. Kids who generally don't like Beetroot will love this I Bet.
  13. You can have it with your Lunch or dinner too.
