Red Carrot pickle

Ingredients to make Red Carrot pickle

  • 1/2 Kg Carrots
  • 1/2 cups mustard oil
  • 2-3 pieces ginger
  • 6-7 green chillies
  • 1/2 tsp red chilli powder
  • 1 tsp haldi [tumeric] powder
  • 2,3 pinch hing [asafoetida]
  • 1 tsp ajwain
  • 1 tsp methi dhana [fenugreek]
  • 2 tbsp rai or sarso [mustard seeds]
  • 2 1/2 tsp salt
  • Lime juice of 1 lemon

How to make Red Carrot pickle

  1. Firstly peel the skin of carrots.Cut the edges from both sides and then cut into lengthwise into small pieces
  2. Now cut the chillies lenthwise
  3. Cut the ginger into pieces
  4. Roast the again and methi dhara lightly in a pan till light brown
  5. Remove from pan
  6. Grind coarsely the roasted again and methi dhara along with rai
  7. Pour oil in the pan to heat till you see smoke coming out
  8. Put ,hing,carrots,ginger,chillies in the oil.Fry for few minutes.
  9. Add Haldi and salt
  10. Off the gas. Now add red chilli powder and ground spices
  11. When mixture cools add lemon juice and salt and mix well
  12. Your Carrot Pickle is ready .
  13. Transfer the pickle in a bowl
  14. Serve the pickle with breakfast or lunch
My Tip: The pickle tastes yummy with the ground spices given above
