Tomato Ketchup /Sauce

Ingredients to make Tomato Ketchup /Sauce

  • 1 kilogram ripe tomatoes of good red colour , cut into quarters
  • 1/3 cup sugar
  • 1 tea spoon chilli powder
  • 1 tea spoon black salt
  • 1 tea spoon dried ginger powder
  • 1 tea spoon salt
  • 1 table spoon vinegar
  • 1/2 tea spoon sodium Benzoit
  • For the Potli:
  • 1 stick cinnamon broken
  • 1 black cardamom
  • 4 Cloves
  • 1 bay leaf broken
  • 6 pieces of  coarsely crushed peppercorns

How to make Tomato Ketchup /Sauce

  1. Combine all the dry grounded ingredients in a muslin cloth, tie a knot and keep aside.
  2. Combine the tomatoes and the prepared Potli in the pressure cooker and pressure cook for 3 whistles, without adding water.
  3. Allow the steam to escape before opening the lid, remove the Potli from the tomato mixture and discard it.
  4. Cool the tomato mixture slightly and blend it in a mixer or grind it with grinder till smooth.
  5. Strain the mixture using a strainer.
  6. Transfer the tomato mixture into a deep non-stick pan, or in a cooker.. cook on a medium flame till 15 to 17 minutes
  7. Add the chilli powder and black salt with dried ginger powder mix well
  8. Add sugar mix nicely let the mixture cook till it gets the required thickness and also the mixture leaves the sides of the utensil while stirring occasionally.
  9. Add plain salt to enhances the taste before adding vinegar
  10. Add vinegar mixture and off the flame.Cool completely
  11. Once cooled, add the sodium benzoate, mix well and store it in an air tight container in the refrigerator
My Tip: Note that no water is used in the preparation – this helps cook the sauce faster and also to increase its shelf life.
