Ingredients Serving: 2

  1. 1/2 cup oatmeal
  2. 1/2 cup whole wheat flour
  3. 1 cup boiling water
  4. 1 tbsp honey
  5. 1 tbsp molasses (optional)
  6. 1 tbsp oil
  7. 1/4 cup warm water
  8. pinch sugar
  9. 2 tsp yeast
  10. 1 1/2 + 2 tsp maida/all purpose or bread flour
  11. 1 tsp salt

Instructions

  1. Add oats and whole wheat flour in a bowl. Add the boiling water then stir in honey, molasses if using, oil, salt and let it cool for 30 mins.
  2. In warm water dissolve sugar and yeast, let it stand in a warm place till it foams on top. Add this to the oat mixture, mix well.
  3. Gradually add the maida, 1/2 cup at a time, to get a firm dough. Knead for 5 mins on a floured surface till smooth.
  4. Form dough into a ball, place in a oiled bowl, turning once to coat. Cover the bowl with plastic wrap and leave for 1 hour.
  5. You can make either a sandwich loaf or a free-form, German style loaf. To make a bun like, cut the dough in 2 pieces for big buns make 4 pieces for smaller buns.
  6. Place loaf on parchment paper, spray the top of the loaf with water and sprinkle oatmeal. Cover with a towel and let it rise till almost double.
  7. Preheat your oven to 200°C Slash the top of the loaf with a sharp razor blade. Place the loaf pan in the oven and bake for 30-40 mins until golden brown.
