Cherry Kheer

Ingredients to make Cherry Kheer

  • 1 cup whole milk
  • 1 cup granulated sugar
  • 1 cup cooked rice
  • 1 tbsp vanilla custard powder
  • Few saffron strands
  • 1 tsp cardamom powder
  • 1 tsp nutmeg powder
  • 15 to 20 cherries deseeded and chopped
  • 3 to 4 finely chopped almond slices

How to make Cherry Kheer

  1. Firstly take a deep vessel and add milk to it.
  2. Now switch on the gas and put it on a medium flame.
  3. Stir milk continuously for about 15 to 20 mins on medium flame.
  4. Add sugar and stir properly till it gets dissolved completely.
  5. At this stage add custard powder. Make sure you make a slurry of it by adding a little milk to prevent lumps.
  6. Now add cooked rice and follow the process of stirring. To prevent milk from sticking to the vessel cooking on a medium flame and stirring is recommended.
  7. Once the rice and milk have blended uniformly it is time to add saffron strands.
  8. Now switch off the flame and let the Kheer cool but is still warm.
  9. At this stage add chopped cherries and stir it properly. Before adding marinate chopped cherries in granulated sugar for 20 to 25 mins for uniform taste.
  10. Garnish it with cherries and almond slices and nutmeg powder.
  11. Refrigerate for about 2 hours
  12. Slurp it with a spoon or pour it in a small bowl and enjoy.
  13. Elegant and flavourful cherry kheer

My Tip:

To create the red colour effect add cherry puree at the last stage before adding cherries.
