Road Side Masala Egg Bhurji and Pav

Ingredients to make Road Side Masala Egg Bhurji and Pav

  • 3 eggs
  • 4 to 5 buns
  • 2 tbsp butter
  • 1 finely chopped red onion
  • 1 finely chopped tomato
  • 3 to 4 green chillies
  • 4 garlic cloves finely chopped
  • 1 cup finely chopped coriander
  • salt as per taste
  • 1 tbsp cumin powder
  • 1 tbsp red chilly powder
  • 1 tbsp coriander powder
  • 1 tbsp garam masala
  • 1 tsp turmeric powder

How to make Road Side Masala Egg Bhurji and Pav

  1. Start the process by whisking egg whites and yolks properly.keep it aside.
  2. Switch on the gas. Place a wok and add butter. Keep the flame on a medium heat.
  3. Add chopped onions, tomatoes, green chillies, and garlic to it.
  4. Increase the flame and stir continuously till the mixture becomes translucent.
  5. Add prepared egg mixture to it.
  6. Now add all the spices and seasonings to it.
  7. Stir continuously on a medium flame till it becomes dry.
  8. Take a potato masher and mash it properly.
  9. Switch off the flame.
  10. Take masala egg Bhurji in a plate and garnish it with chopped coriander.
  11. Take a non-stick pan, add butter and toast the buns till they are light golden brown in colour.
  12. Serve Bhurji by stuffing it in the buns or simply eating it separately.
