Kasouri Red Mutton Curry (Young Goat)

Ingredients Serving: 2

  1. Meat of Young Goat--500 gms
  2. Mustard oil + Desi Ghee - - 4 tbsp mustard oil + 2 tbsp Ghee
  3. Onion -- 1 big size (sliced)
  4. Garlic -- 8-10 cloves
  5. Ginger garlic paste -- 2 tsp
  6. Ripe Tomatoes -- 2 big (sliced)
  7. Low-fat curd -- 4 tbsp
  8. Cumin powder -- 1 tbsp
  9. Coriander powder -- 1 tbsp
  10. Dried Kasuri methi leaves -- 1 tbsp
  11. Potato -- 2 big (cut into halves)
  12. Salt -- as per your taste
  13. Sugar -- 1 tsp
  14. Whole garam masala :
  15. Bay leaf - - 2 nos
  16. Green cardamom - - 4 nos
  17. Cloves - - 5-6 nos
  18. Cinnamon - - 2 inch size
  19. Green chilly - - 4-5 (slit)
  20. Dried Red chilly paste - - 2-3 big red chilly
  21. Home made Garam masala powder :
  22. Roast all whole Garam masala with Mace&Nutmeg (1 Nutmeg and 2 stripes Mace) & grind it
  23. Cilantro - - 2 stripes
  24. Kashmiri Mirch powder - - 2 tbsp
  25. Turmeric - - 2 tsp

Instructions

  1. First in a deep kadhai (preferably non-stick) put the oil + Ghee mixture. Now add the whole Garam masalas.
  2. Now when the oil becomes hot add the whole garlic cloves.Saute it for some time to form a little brownish.
  3. Next, add the sliced onions...sprinkle some salt for instant brownish colour. Add the potatoes (cut into halves).
  4. Next the ginger garlic paste, sliced tomatoes, all the masalas except the home made Garam masala powder, add cilantro., turmeric.
  5. Add salt and sugar.... And saute very well till all get mixed up very well.
  6. Add washed mutton and sour curd.... Cook it very well for some time till mixed up...add a little water.
  7. When oil comes out from the gravy... Add the Garam masala powder and the Kasuri Methi a little... Now again cook it and sim the flame by covering it for some time. Add the green chillies and the red chilly paste.....mix it up...
  8. Now put the mutton gravy in a pressure cooker with some more water (as per your consistency of thick or thin gravy)... I made it a bit thin than thick.
  9. Now add the rest Kasuri Methi leaves (dried) & give it 8-10 whistles for very soft tender Goat meat.
  10. And after giving it a standing time..... Serve it hot with some rice.... You can take it with some roti or naan.... But it tastes the best with some rice ... Enjoy your dish.
