Black Sesame (Til) Ice Cream

Ingredients to make Black Sesame (Til) Ice Cream

  • Condensed milk 400 g
  • Whipped cream 2 cups
  • Vanilla essence 1 tsp
  • Black Til 75g

How to make Black Sesame (Til) Ice Cream

  1. Take Til in a food processor and grind it to a powder. Make sure you do this in quick pulses otherwise til will release oil. Keep aside.
  2. Take condensed milk and add the powder to it
  3. Whip cream until stiff peaks form. Take a cup of this cream and add it to the condensed milk. This makes it lighter in consistency.
  4. Now add the condensed milk back into the whipped cream and fold very gently. Initially, you will see lumps. Keep folding gently till it is almost smooth. Take care not to deflate it
  5. Pour mixture in an aluminium container and cover with plastic cling film. This prevents ice crystals. Freeze for 6 hours

My Tip:

Make sure Til does not release oil while grinding. Add some black colour if you want to enhance it
