Ingredients to make Quinoa Salad

  • Quinoa -100 gm
  • Californian red grapes – 20 gm
  • White wine – 10 ml
  • Black olive – 100 gm
  • Cumin powder – 5 gm
  • Extra virgin olive oil – 30 ml
  • Extra virgin olive oil – 30 ml
  • Caperberry – 1 no for garnish
  • Leeks – 20 gm
  • Red capsicum – 20 gm
  • Water – enough to cook quinoa
  • Yellow capsicum – 20 gm
  • Lemon juice – 10 ml
  • Flour – 100 gm
  • Walnut – 20 gm
  • Sesame seed – 20 gm
  • Eggs – 2 no
  • Beetroot puree – a bit
  • Sea salt and black pepper – for seasoning

How to make Quinoa Salad

  1. Take quinoa in a bowl .Wash it with cold water three times. Strain and cook it with warm water till it gets soft . Chill it down.
  2. Cut red capsicum and yellow capsicum in brunoise which means small dices . Julienne some red capsicum and yellow capsicum and add in chilled water so that it curls .
  3. Marinate grapes with white wine and keep it chilled . Take black olive, slice them and cook it at 50 degree centigrade for 2 hrs or till it becomes dry .Transform them into powder.
  4. Make a dressing for quinoa using extra virgin olive oil and lemon juice . Season with sea salt and black pepper .
  5. Make a dough with flour , eggs , sesame seed and walnut … cut it into round and bake it at 150 degree centigrade for 25 minutes .
  6. Blanch leeks in hot water and immediately chill it down . Marinate quinoa with the dressing.
  7. Plate it with leeks, red capsicum, yellow capsicum ,black olive powder , beetroot puree, caper berry , black olive powder, macerated grapes and caperberry .
