Veggie Oats

Ingredients to make Veggie Oats

  • Oats ¾ cup
  • Oil 2-3 tablespoon
  • Chopped onion ¼ cup
  • Chopped carrot ¼ cup
  • Chopped tomato ¼ cup
  • Chopped capsicum ¼ cup
  • Chopped french beans 2 strings
  • Paneer - small cubes
  • Cumin seeds
  • Mustard seeds
  • curry leaves
  • Green chilli 1 finely chopped
  • Turmeric Powder
  • Salt
  • Black pepper powder
  • Red chilli powder
  • Coriander leaves
  • Lemon juice 1-1½ tea spoon
  • Seasoning (optional)

How to make Veggie Oats

  1. Chop all the veggies into tiny cubes.
  2. Heat oil in a pan.
  3. Once the oil turns hot, add mustard seeds, cumin seeds, curry leaves and green chilli. Saute well.
  4. As the aroma begins and mustard seeds start to crackle up, add all the veggies and cook them for around 2 minutes.
  5. Put oats in the pan.
  6. Add water, salt, black pepper powder, red chilli powder and turmeric powder.
  7. Give a quick stir so that everything is mixed.
  8. Let it cook on simmer till the water evaporates.
  9. If you like oats with little moisture​, no need to evaporate the water completely
  10. Serve veggie oats garnished with coriander leaves, seasoning and drizzle some lemon juice above.
  11. You may garnish it with crumbs of spicy chips for flavour and crunch.
My Tip: You can put paneer cubes along with veggies while cooking or put them along with coriander leaves for garnishing.
