ABOUT Mutton Rogan Josh RECIPE

This is a Kashmiri dish.this dish is prepared in two ways one by the Kashmiri Pandits without using onion and garlic and another way by the Kashmiri Muslims who use onion and garlic. Mine is without onion garlic.

Ingredients Serving: 5

  1. Mutton 800 gm
  2. Hing or asafoetida a pinch
  3. Cinnamon 2 one inch piece
  4. Cloves 6-8
  5. Ratanjot 4-6 inch pieces
  6. Kashmiri Mowal powder 2 tbsp
  7. Black pepper corns 4
  8. Kashmiri red chilli powder 1tbsp
  9. Salt to taste
  10. Black cardamom 4
  11. Fennel Powder 2 Tsp
  12. Dry ginger powder 1tbsp
  13. Coriander powder 1tbsp
  14. Yogurt (whisked)1cup
  15. Coriander leaves to garnish
  16. Mustard oil for cooking

Instructions

  1. Heat oil in a thick bottomed pan.
  2. Add Hing, cinnamon, cloves, black pepper and black cardamom.
  3. Saute till fragrant.
  4. Add mutton and cook on medium heat till they turn slightly reddish brown colour
  5. Stir constantly
  6. Sprinkle some water and continue cooking for about 15 mins on medium heat
  7. Add all the dry powders now along with the salt
  8. Add yoghurt and 2 cups of water
  9. Cook covered till lamb is tender, stirring occasionally.
