This is a Kashmiri dish.this dish is prepared in two ways one by the Kashmiri Pandits without using onion and garlic and another way by the Kashmiri Muslims who use onion and garlic. Mine is without onion garlic.

Ingredients to make Mutton Rogan Josh

  • Mutton 800 gm
  • Hing or asafoetida a pinch
  • Cinnamon 2 one inch piece
  • Cloves 6-8
  • Ratanjot 4-6 inch pieces
  • Kashmiri Mowal powder 2 tbsp
  • Black pepper corns 4
  • Kashmiri red chilli powder 1tbsp
  • Salt to taste
  • Black cardamom 4
  • Fennel Powder 2 Tsp
  • Dry ginger powder 1tbsp
  • Coriander powder 1tbsp
  • Yogurt (whisked)1cup
  • Coriander leaves to garnish
  • Mustard oil for cooking

How to make Mutton Rogan Josh

  1. Heat oil in a thick bottomed pan.
  2. Add Hing, cinnamon, cloves, black pepper and black cardamom.
  3. Saute till fragrant.
  4. Add mutton and cook on medium heat till they turn slightly reddish brown colour
  5. Stir constantly
  6. Sprinkle some water and continue cooking for about 15 mins on medium heat
  7. Add all the dry powders now along with the salt
  8. Add yoghurt and 2 cups of water
  9. Cook covered till lamb is tender, stirring occasionally.
My Tip: Ratanjot or Mawal powder is optional as it is not always available. I have managed it from Kashmir so I used it.this is only for colour.
