Bell Peppers and Vegetable Fried Rice

Ingredients to make Bell Peppers and Vegetable Fried Rice

  • 3 cups basmati rice
  • Oil 3 tbsp
  • Chopped vegetables
  • 1 finely chopped beetroot
  • 1 finely chopped potato
  • 1 cup corn. I have used canned.
  • Chopped bell peppers
  • 1 red onion
  • 1 tomato
  • 5 garlic cloves
  • 2 to 3 green chillies
  • 1 small ginger
  • 1/2tsp mustard seeds
  • 1/2tsp cumin seeds
  • 1 tbsp garam masala
  • 1 tbsp chilly powder
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1/2 tbsp turmeric powder
  • salt as per taste

How to make Bell Peppers and Vegetable Fried Rice

  1. Firstly steam the rice in the pressure cooker by adding salt and water till 4 whistles.
  2. Let it cool.
  3. Take a wok, add oil, mustard seeds and cumin seeds. Let it splutter.
  4. Add finely chopped onion and saute it till it becomes translucent.
  5. Add finely chopped tomatoes.
  6. Add finely chopped green chillies
  7. Mix it well and now add chopped ginger, garlic to it.
  8. Give it a mix till it releases a flavourful aroma.
  9. Add all the vegetables at this stage and mix it well.
  10. Cover it with a lid and let it cool on a medium flame for about 10 to 15mins
  11. Further, add chopped bell peppers and stir it nicely.
  12. Let it cook for 5 to 10 mins.
  13. Remember not to over cook vegetables and bell peppers. They should be cooked yet crunchy, not mushy.
  14. Now add all the seasonings and give it a nice mix till everything coats the vegetables and raw smell of spices is reduced.
  15. Now add cooked rice to the mixture and mix it gently till everything gets a uniform.
  16. Switch off the flame and take your spicy vegetable rice on a plate.
  17. Enjoy it with cucumber raita.
