Beetroot Raita

Ingredients to make Beetroot Raita

  • 1 cup grated beetroot.
  • 1 cup fresh whisked curd.
  • Salt to taste.
  • 1/2tsp sugar ( optional ).
  • For Tempering:
  • 2 finely chopped green chillies.
  • 1 tsp roasted cumin seeds powder.
  • 1 tsp urad dal.
  • 1 tsp chana dal.
  • 5 -10 curry leaves.
  • 3 tsp roughly crushed peanuts.
  • 1/2tsp mustard seeds.
  • 1 tbsp grated ginger.
  • A pinch of asafoetida.
  • Freshly chopped coriander leaves for garnishing.

How to make Beetroot Raita

  1. Combine the grated beetroot, whisked curd, salt and sugar mix well and keep aside.
  2. For tempering: Heat oil in a small pan, dd cumin seeds, mustard seeds, urad dal and chana dal.
  3. When they crackle add asafoetida, green chillies, ginger, curry leaves and peanuts.
  4. Pour this on the raita.
  5. Mix well.
  6. Just before serving garnish with freshly chopped coriander leaves.
