Beetroot Borscht Popsicles

Ingredients to make Beetroot Borscht Popsicles

  • Beetroot 1 medium, peeled and grated
  • Carrot 1, 1/2 cup grated
  • Cucumber 1/2 cup grated
  • French beans 5-6, chopped
  • Onion, 1 medium chopped
  • Lettuce 1/2 cup
  • Ghee 1 tbsp
  • Water 1.5 cups
  • Coriander a handful
  • Jeera 1/4tsp
  • Saunf, powdered 1/4tsp
  • Salt to taste
  • Black Pepper to taste
  • Chilli flakes 1tsp (add more if you like)

How to make Beetroot Borscht Popsicles

  1. Boil beetroot, carrot, onion, French beans in a pot with 1.5 cups water for 15 mins with lid covered. You can also pressure cook it
  2. Add ghee and lettuce and cook for another 7mins
  3. Add jeera, fennel seeds, salt and pepper to this and mix well
  4. Take off heat and allow to cool
  5. Add cucumber now
  6. Blend everything well with a hand blender and pour into popsicle moulds.
  7. Freeze overnight. Serve with lemon juice and chaat masala on top
