Butterscotch Ice Cream

Ingredients Serving: 6

  1. 2 &1/2 cups milk
  2. 1/2 cup condensed milk
  3. 1/4 cup powdered sugar
  4. 1/4 cup milk powder
  5. 1/2 tsp butter scotch essence
  6. 1/2 cup Sugar
  7. 1/2 cup powdered cashew nuts
  8. 1 tsp butter
  9. Oil for greasing

Instructions

  1. For the praline:
  2. Heat the sugar in a non-stick pan and cook on a medium flame for 5 to 7 minutes or until the sugar melts, while stirring continuously
  3. Remove from the flame, add the cashew nuts and butter and mix well
  4. Spread the mixture on a greased flat surface and allow it to cool and harden
  5. Scrape it out using a palate knife and coarsely powder it using a mortar-pestle(Khalbatta) keep aside.
  6. For the ice cream:
  7. Combine all the ingredients except the butterscotch essence and whisk together so that no lumps remain.
  8. Bring to a boil in a non-stick pan and simmer for 7 minutes, while stirring continuously.
  9. Cool completely, add the butterscotch essence and mix well.
  10. Pour the mixture into a shallow aluminium container. Cover with an aluminium foil and freeze for 6 hours or till semi set.
  11. Remove the semi set ice cream from the Freezer and transfer it to a mixer and blend until smooth.
  12. Add the prepare praline and mix well.
  13. Transfer the mixture back into the same aluminium shallow container.cover with an aluminium foil and freeze for approx 10 hours or until set.
  14. Scoop and serve.
