ABOUT Plum and Tomato Soup RECIPE

Had few extra number of plums and came out with the idea of using them in my soup. Plum has a good amount of potassium, minerals, and antioxidants. this is a very healthy soup for all age group.

Ingredients Serving: 3

  1. Onion 1 chopped
  2. Red tomato-1 big chopped
  3. Plum-4 nos chopped
  4. Beets-1/2- chopped
  5. Pepper corns-4
  6. Butter-1/2tbsp
  7. Salt to tast
  8. Water-2cups
  9. Sugar-1/2tsp
  10. Carrot-1 chopped
  11. Potato-1 small size , chopped ( optional)
  12. Dried oregano- two big pinches
  13. Garlic-2 big cloves
  14. Coriander or parsley leaves for garnishing.

Instructions

  1. Take a pan with butter and heat. add onions, garlic, salt and fry for two mins.
  2. Add all the veggies one by one and mix.
  3. Add sugar, peppercorns and oregano powder
  4. Cook the veggies by adding water for ten minutes.
  5. Cool the cooked veggies and make purée out of it.
  6. Adjust the consistency by adding extra water and give a single boil. Garnish with coriander or parsley leaves and serve hot.
