Ingredients Serving: 2

  1. 2 cups seedless watermelon
  2. 1 orange juice freshly squeeze
  3. 1 small beetroot grated
  4. 1 medium size tomato
  5. 1/2 inch ginger grated
  6. 1 handful mint leaves wash and chopped
  7. 1 tsp Apple Cider Vinegar
  8. rock/sea salt to taste
  9. 1 pinch cayenne pepper/chill powder
  10. 1 tbsp extra virgin olive oil
  11. 1 english cucumber peel and finely chopped
  12. 1 tsp Lemon juice
  13. 2 tbsp basil seeds

Instructions

  1. First soak basil seeds in water for 10-15 minutes.. Keep it aside
  2. In a blender add water melon, lemon juice, Olive oil, Orange juice, tomato, beetroot, mint leaves, vinegar, salt , pepper and grind it till smooth.
  3. Seive it
  4. In two empty glasses add soaked basil seeds. Pour soup over it slowly.
  5. Garnish it with chopped cucumber. Serve chilled
