Ingredients to make Potato Mango Kulfi. ( try different)

  • 6 small sized potatoes (boiled)
  • 2.5 cups of milk
  • 1 tsp Cardamom powder
  • 1 Alphonso Mango (chopped)
  • 3-5 tbsp Sugar
  • 2 tsp Butter ( unsalted)
  • 2 tsp Cornflour
  • 1 tsp Vanilla extract
  • Ripe mango ( chopped) for garnishing.

How to make Potato Mango Kulfi. ( try different)

  1. Peel and mash the boiled potatoes.
  2. Mix mashed potatoes, butter and one and a half cup milk and heat in a heavy bottom pan.
  3. Add Sugar and cook stirring constantly.
  4. Mix corn flour in 1/2 cup milk and add. Cook till thick.
  5. Add fresh cream, cook on low heat for a while. Add Vanilla extract to it and take off from heat.
  6. Allow it to cool. Add Cardamom powder and mix well.
  7. Add pureed mango (blend without adding water); Mix well.
  8. Pour in a glass or mould or in a aluminum tin mould.
  9. Refrigerate overnight. Chop and serve with a garnish of mango chunks.

My Tip:

I prefer less sweet deserts. So added less sugar. You can adjust the sugar according to sweetness you want.
