Ingredients to make Ragda patties

  • Ingredients for ragda-White matar-1cup soaked overnight
  • ginger garlic paste-2teaspoons
  • onion-2 paste
  • tomato-2 puree
  • red chilly powder-1/2teaspoon
  • Chaat masala-1/2teaspoon
  • oil-2tablespoons
  • salt to taste
  • Green chutney-(coriander leaves 1 bunch +peanuts 1handfull+salt to taste+coriander powder-1/4teaspoon+juice of half lemon+green chilly 2
  • Tamarind chutney-tamarind 2tablespoons+jaggery 1 tablespoon+salt+water
  • Garam masala-1/4teaspoon
  • Red food colour-2drops
  • Ingredients for patties-boil and mash potato-4-5
  • coriander leave -2teaspoons
  • Grern chilly-2chopped
  • salt to taste
  • cornflour-2teaspoons
  • oil-2teaspoons

How to make Ragda patties

  1. Pressure cook the matar by adding salt and red food colour for 2whistles till matar soften
  2. Take a mixer jar add all green chutney ingredients and make a coarse paste
  3. Heat 1glass of water in a pan add all tamarind chutney ingredients. and bring it to boil for 10 to 12 minutes
  4. Heat oil in a pan add ginger garlic paste and saute for a minute
  5. Add onion paste and saute till light brown
  6. Add tomato puree , all dry masala and salt and cook till oil separate
  7. Add boiled matar and 1 glass of water
  8. Add 1 tablespoon of green chutney and 1 tablespoon of tamarind chutney.
  9. Cook for 5 minutes on slow flame
  10. Take a bowl add boil and mash potato.add all patio ingredients and make dough
  11. Make patties with dough and shallow fry on nonstick tawa
  12. Take a serving plate.place patties.pour ragda over to patties spread some green and turmind chutney.garnish with sev.
