ABOUT Desi Quesidilla RECIPE

The credit for this goes to my friend Shalini Dam from whom I got this idea in the first place. A good way to use up leftover rotis, saves you the trouble of heating them up to go with the sabzi as well.

Ingredients Serving: 1

  1. Chapatis: 2
  2. Onions: 1 tbsp finely chopped
  3. Capsicum: 1 tbsp finely chopped
  4. Tomatoes: 1 tbsp finely chopped
  5. Green chillies: finely chopped to taste
  6. Cheese: 2 tbsp grated
  7. Oil or butter: 1 tbsp
  8. Chilli flakes
  9. Mixed herbs

Instructions

  1. Finely chop all ingredients mentioned, except for the chapatis and grate the cheese.
  2. Heat oil in a non-stick pan and add the chopped ingredients except for the cheese. Add the chilli flakes and mixed herbs. If you dont have them, forget it.
  3. Toss around on high heat till onions lose colour
  4. Remove from fire
  5. Place one chapati on the greasy pan and place the semi-cooked ingredients on it. Add the grated cheese and cover with the second chapati.
  6. Lower heat and cook by pressing down on the melting cheese. This will ensure that the covering chapati sticks to the lower one.
  7. After some time flip the quesidilla over and repeat process.
  8. Remove from fire and recommended eating is with fingers as a fork just does not work and why bother with a knife? Just use your left hand to work the remote to change channels!
