Ash Gourd ice cream

Ingredients to make Ash Gourd ice cream

  • Ash gourd or Kohala or winter melon– 11/2 cup grated, squeezed
  • Ghee – 1tbs
  • Full fat milk –2cups
  • Whipped cream 1/2cup
  • Sugar –1/2 cup
  • Cardamom powder- ½ tsp
  • Raisins – 14-15
  • Cashew nuts – 4-5 finely chopped
  • Garnish - chocolate sauce, jalebi, raisins

How to make Ash Gourd ice cream

  1. In a pan add ghee. Add grated, squeezed Ash gourd or kohala. Cook on medium low heat until moisture is evaporated.
  2. Add milk; let it boil, add sugar. Keep stirring until milk is reduced to half.
  3. Add cardamom powder. Mix thoroughly.
  4. Let it cool. Blend 3/4th mixture in a blender till smooth puree.
  5. Now add chopped Cashew nuts, raisins and remaining mixture. Mix well.
  6. Fold it in whipped Cream.
  7. Pour mixture in airtight container and freeze for 4-5 hrs.
  8. Remove after 3-4 hours. Blend it for 2-3minutes with hand blender.
  9. Keep it in airtight container and refrigerate it for 5-6hrs or until set.
  10. Scoop out and serve chilled top with sauce or jalebi.
