Ingredients to make Spicy Pumpkin Surprise

  • Fresh cream 1 and 1/2 cup
  • Condensed milk 1/2 cup
  • pumpkin(of deep yellow colour) 200 grams peeled and chopped in medium size cubes
  • cinnamon 1 stick of 1.5 inches
  • cloves 6
  • nutmeg powder 2 pinches
  • ginger powder 2 pinches
  • sugar 1 tablespoon
  • For caramelised sugar chunks
  • 1 tablespoon sugar

How to make Spicy Pumpkin Surprise

  1. Take enough water in a vessel and put pumpkin cubes.
  2. Add cinnamon , ginger powder, cloves and nutmeg powder .
  3. Boil this till pumpkin soft.
  4. When some water is left add 1 teaspoon sugar.
  5. Drain and remove khada masala( cinnamon and cloves)
  6. Let pumpkin cool
  7. Meanwhile make sugar chunks.
  8. To make caramelised sugar chunks , melt sugar on low heat in a non stick pan.
  9. When slighty thick and nice brown colour , spread it on a parchment paper.
  10. Cool and break it.
  11. After cooling grind pumpkin to a fine puree.
  12. Whip the cream in a deep bowl till thick and fluffy.
  13. Add pumpkin puree and whisk in a blender.
  14. Add condensed milk and pieces of sugar chunks. Mix well.
  15. Freeze overnight or 6 to 7 hours.
  16. While serving decorate with sugar chunks.
