Green mango squash

Ingredients to make Green mango squash

  • Green mango (kaccha aam) 1kg
  • Sugar 1.5kg
  • Black salt 1 teaspoon
  • Roasted cumin powder 1 tablespoon
  • Green colour 2 teaspoon
  • Mango essence 1.5 teaspoon
  • Citric acid 1/2 teaspoon
  • Black pepper powder 1 pinch
  • 100gm mint leaves
  • Salt 1/2 teaspoon

How to make Green mango squash

  1. 1. First of all boil the mangoes
  2. 2. When the mangoes boil, remove it from the heat and allow cooling.
  3. 3. When they cools, peel the skin of the mangoes and mash them with 2glass of water.
  4. 4. Add 1.5kg sugar and black salt, and Citric acid mix well and let it come to boil. As the sugar melts, it will become thin and liquidy.
  5. 5. Make potli of cumin powder, black pepper, salt and add them in the boiling solution and stir well.
  6. 6.When the solution turns thick, add mashed mint in it n stir well then switch off the flame and add essence n colour in it.
  7. 7. When the solution cools, filter them and store the squash in an airtight bottle n keep squash safely in the fridge for years.
  8. 8. Serve chilled in a glass or tumbler. How to serve : Take 1 glass add 2 tablespoon squash and full glass of cold water.
  9. Note : After filter the squash you can use the remaining portion of mangoes solution as a jam.
My Tip: Don't boil too much and stir continuously otherwise it will settle down in the kadahi.
