I adapted this idea from an instagram account foodyfetish. i have done some modifications to it.

Ingredients Serving: 5

  1. 1+1/4 cup all purpose flour
  2. 1/2 tsp baking soda
  3. 1/4 tsp Salt
  4. 3/4 cup powdered sugar (150 grams)
  5. 1/4 cup unsalted butter (room temperature)
  6. 1/2 cup oil
  7. 1 large egg
  8. 1 tsp strawberry extract
  9. 1 tsp vinegar
  10. 1/2 cup Buttermilk
  11. 1/2 cup tutti fruity
  12. 2 cups whipping cream
  13. 100g Strawberry jelly powder (I used strawberry jelly crystals by blue bird)
  14. Some cherries

Instructions

  1. Remove weight and filter from the lid of pressure cooker.
  2. Place the pressure cooker on stove top, add 1 cup of salt, place some steel bowl or heat proof pot, cover and preheat on medium flame for 5 minutes. Then turn the flame on low.
  3. Make buttermilk, combine 1/2 cup of milk and 1/2 tbsp. vinegar, stir and set a side for 15 minutes.
  4. Sift together, flour, baking soda and salt. Mix well and set this aside.
  5. Beat sugar and butter to combine. Add egg and beat again to mix it well.
  6. Add oil, strawberry extract and vinegar. Beat until combine.
  7. Now start adding dry ingredients alternatively with buttermilk mixture in two batches. Add tutti fruity and beat till everything is smooth.
  8. Pour this mixture into a pre-greased rectangular baking pan. Tap to remove air bubbles.
  9. Bake in pressure cooker for 30-35 minutes on medium low flame.
  10. Remove from pressure cooker and let it cool completely. shift the whole cake into an another rectangular tin.
  11. Mix 1 cup water and 50g jelly powder in pot. heat it on medium flame until the Sugar & crystals in powder get dissolved completely. let it cool at room temperature.
  12. Add whipped cream to this mixture and whip it until it has a mousse like consistency.
  13. Pour this mixture on the top of tutti fruity cake. Set it in the fridge to chill completely.
  14. Now take remaining jelly powder and mix in 1/2 cup of cold water. Heat on medium flame for 2-3 minutes. Remove from the heat and add 1/2 cup cold water.
  15. Pour this on the top of cake icing and set into fridge until jelly formed. cut the cake into square pieces and decorate with whipped cream and cherry.
