ABOUT Sweet Beetroot Cake RECIPE

Really this cake has come out well Besides its unique, bright red color, the flavor of this beetroot cake/bread with nuts and other fruit juices makes it one of the best breads I've tasted.

Ingredients Serving: 6

  1. 1 1⁄2 cups flour (I use half whole wheat)
  2. 3⁄4 cup sugar
  3. 2  teaspoons baking powder
  4. 1  teaspoon cinnamon
  5. 1⁄2 teaspoon salt
  6. 1⁄4 teaspoon all spice as fennel and dry ginger powder
  7. 1⁄4 teaspoon nutmeg
  8. 1   cup curd
  9. 1  cup raw beet, finely shredded
  10. 1⁄4 cup oil
  11. 1⁄4 cup orange juice or 1⁄4 cup other  fruit juice
  12. 1⁄4 cup applesauce or any fruit jelly here I used guava jelly
  13. 3⁄4 cup nuts, chopped

Instructions

  1. Grease a loaf pan and set it aside.
  2. Combine the dry ingredients in a bowl (except the nuts).
  3. In a separate bowl, beat the curd and sugar add the beet, oil, orange juice, and applesauce.
  4. Add the wet ingredients to the dry all at once and mix until they are just combined.
  5. Fold the chopped nuts.
  6. Pour the mixture into a prepared loaf pan.
  7. Bake in a preheated oven at 180 degree for 55-60 minutes or until a toothpick inserted near the center comes out clean.
