Instant Carrot Pickle - Gajar ka achar

Ingredients to make Instant Carrot Pickle - Gajar ka achar

  • 2 kg carrots cut into 2 inch long pieces
  • 200 gms skinless split mustard seeds
  • 3 tbsp fenugreek seeds
  • 4 tbsp carrom seeds
  • 1 small bowl coriander seeds
  • 1 small bowl + 2 tbsp fennel seeds
  • 3 tbsp nigella seeds
  • 20 gms spicy red chilli
  • 40 gms kashmiri red chilli
  • 1 TBSP TURMERIC POWDER
  • 2 tbsp salt or as per taste
  • 200 ml mustard oil

How to make Instant Carrot Pickle - Gajar ka achar

  1. roast fenugreek seeds, carrom seeds, nigella seeds, coriander seeds and fennel seeds for 3-4 mins on a low heat. roast the red chillies for 3-4 mins on a low heat. roast 2 tbsp fennel seeds and keep it separately.
  2. no need to roast the skinless split mustard seeds.
  3. Grind the roasted spices along with the skinless split mustard seeds to a coarse powder. mix the 2 tbsp separately roasted fennel seeds. pickle masala is ready.
  4. Keep the carrots under the sun for 4 hrs spread in a plate or a plastic sheet.
  5. Transfer the carrots in a mixing bowl. mix turmeric powder and salt to taste.
  6. Take 1 medium bowl of pickle masala. add it into the mixing Bowl and mix it well with the carrots. ( remaining pickle masala can be used to make other pickles).
  7. Add the mustard oil and mix it well.
  8. Carrot pickle is ready. transfer the pickle in a glass jar it can be stored for months.
My Tip: do not over roast the spices or else it will turn bitter in taste
