ABOUT Badami Besan Ladoo RECIPE

Ladoos prepared with roasted bengal gram flour , desi ghee with an addition of coarsely ground almonds ,flavoured with cardamon powder, sweetened with powdered sugar and garnished with slivered nuts.

Ingredients Serving: 3

  1. Bengal gram flour - 1 cup
  2. Pure ghee / Desi ghee - 1/4 cup
  3. Powdered sugar or boora - 1/2 cup
  4. Almonds lightly roasted and coarsely ground - 20 gms.
  5. For the Flavouring: Green cardamom powder - 1/4 tsp
  6. To Garnish:
  7. Almonds blanched refreshed peeled and slivered - 10 gms
  8. Pistachio nuts blanched peeled & slivered - 15 gms

Instructions

  1. In a Heavy bottomed non-stick kadhai broil/dry roast bengal gram flour, till the raw aroma disappears i.e for 10 minutes on a slow flame.
  2. Keep stirring continuously with a wooden flat spoon, taking care that the besan does not burn. In a deep pan, melt the ghee.
  3. Add this ghee to the roasted bengal gram, cook for another 5 minutes, stirring it occasionally. You will see that the besan has started turning a little reddish in colour and nutty in fragrance. Switch off the flame.
  4. Add the Powdered sugar, coarsly ground almond powder, cardamom powder, 1/4 th of the slivered almonds and pistachio nuts.
  5. Stir well in order to avoid lump formation. Once you have completely mixed the above ingredients, let it cool down to room temperature.
  6. With the help of your palms prepare six medium sized besan ladoos and serve garnished with slivered almonds and pistachio nuts or you may store them in air tight container and serve as and when desired.
