Ingredients to make GNOCCHI

  • Potatoes 4 medium
  • Rawa 1/2 cup
  • Salt 1/4 tesp
  • Olive oil 1 tbsp
  • Salt and pepper to sprinkle
  • For tomato sauce ::
  • Tomatoes 3
  • Dried whole red chilli 3
  • Onion 1
  • Garlic 1 tesp
  • Cilantro 2 tbsp
  • Oil 1 tbsp
  • Chilli flakes 1 tesp
  • Salt 3/4 tesp

How to make GNOCCHI

  1. Blanch tomatoes with whole red chillies in half cup of water.
  2. Cool and grind to a smooth paste.
  3. Boil potatoes.
  4. Peel and mash potatoes while still hot.
  5. Add rawa and salt. mix well.
  6. Divide the dough into 5 portions.
  7. Put 3 glass of water to boil in a big vessel.
  8. Roll each portion into a rope.
  9. Cut into one inch pieces.
  10. Dust each piece with flour.
  11. Now is the time to shape gnocchi. Take a fork and slide each piece gently with little pressure to give the texture.
  12. Now add a tesp of salt in boiling water.
  13. Drop 8-10 gnocchi in boiling water. In few seconds they will raise up in water. As soon as they rose up take them out with a slotted spoon. Don't overdo they will get mushy.
  14. Sprinkle some olive oil over cooked gnocchi. Sprinkle some salt and pepper.
  15. In a pan heat a tbsp of oil. Add crushed garlic. Saute.
  16. Add chopped cilantro and saute.
  17. Add finely chopped onions and saute.
  18. Add chilli flakes and cook for a while to release their aroma.
  19. Add tomato puree and salt. Cook for 2-3 minutes.
  20. In a serving dish place gnocchi. Top with hot tomato sauce and serve.
