Ingredients to make Caramel milk Pudding without Oven

  • Milk 500ml
  • Sugar 100g
  • Eggs 4
  • Vanilla extract 1tsp
  • Sugar for caramelisation 3tbsp

How to make Caramel milk Pudding without Oven

  1. 1.) In the first step we have to make the caramel.Put 3tbsp sugar on the tray/dish we are going to make the Pudding.Place it on the stove.
  2. 2.)After about 1/2 minutes the sugar will start to melt and become brown colour.Make sure the flame is in sim otherwise chances are that caramel will be burnt.
  3. 3.) Once all the sugar turned light red or amber colour, switch off the flame and carefully spread the caramel evenly on the sides of the pan.Use tongs as caramel is very hot and you have to be careful.
  4. 4.)After that leave the pan in a safe place for cooling.The cracks formed during cooling is normal.Our Caramel base is ready.
  5. 4.)Now for the Pudding take the sugar and blend it in a blender ,so it will dissolve easily.Now add the eggs and blend for about a minute or less.
  6. 5.)Add milk(boiled or pasteurised) and vanilla extract and give a nice blend.
  7. 6.)Pour the blended mix over the cooled caramel in the Pudding pan.
  8. 7.)Now in a steamer let the water to boil and safely place the Pudding in it.Close the lid and once steam comes out lower the flame and keep it about 10-12 minutes.Then switch off the flame and keep it for some time.
  9. 8.)Open the lid and let it cool down to room temperature.Now refrigerate it (preferably overnight) .
  10. 9.)Unmould it after taking from the refrigerator after 5 mins.Lightly run the knife through the sides and place it upside down on the serving plate and slowly pull up the Pudding pan.
  11. 10.)Serve chilled. Super silky and soft caramel flan is ready.

My Tip:

You can also make it in oven by using water bath technique.
