Ingredients to make achari mutton

  • 500 gms mutton
  • onions finely chopped 200 gms
  • Tomato 1 finely chopped
  • fennel pwdr 1 tspn
  • cumin pwdr 1 tspn
  • For marination-
  • gg paste 150 gms
  • Hung curd 150 gms
  • red chilly paste 1 tblspn
  • pepper powder 1 tspn
  • Salt
  • mango pickle 1 tblspn
  • for tempering -
  • dried red chilly 1
  • asfoetida 1 tspn
  • Bay leaves 2
  • Whole garam masala
  • onion seeds 1 tspn
  • fenugreek seeds 1/2 tspn
  • For garnishing -
  • Coriander leaves
  • Fenugreek leaves
  • sugar
  • Salt
  • Mustard oil
  • for dry roasted masala-
  • 1/4 tspn cumin
  • 1/4 tspn coriander
  • 1 dried red chilly
  • 1/2 tspn paanch phoRon
  • 1 green cardamom
  • 1/2 "cinnamon stick
  • 2 cloves

How to make achari mutton

  1. marinade the mutton and keep for 45 min
  2. heat oil in pan add sugar,caramelise it,then add chopped onions and tomatoes,add salt, saute till melt,keep aside
  3. now heat oil in a pan add the tempering ingredients, fry till crackle and aroma come out.
  4. pour the mutton and saute till the water of marinade absorp
  5. now mix the mango pickle,saute with it,
  6. add the fried onions and tomato paste,then all the other ingredients like cumin pwdr,fennel pwdr and leaves,saute it
  7. fry till the oil comes out from side.
  8. now pour this into a pressure cooker,add 3/4 cup lukewarm water into it and mix well
  9. cover it,simmer the flame after first whistle for 12 min
  10. keep the cooker till it open its own
  11. add the roasted masala 1 tspn
  12. serve hot
My Tip: paanch phoRon- the five spices mix-cumin, kalonji,fenugreek seeds,radhuni,fennel seed
