Ingredients to make Rajasthani laal maas

  • chicken 750 grams
  • curd half cup
  • ginger garlic paste 1 tablespoon
  • Kashmiri red chillies 10
  • Kashmiri chilli powder 1 tablespoon
  • Garam masala 1 teaspoon
  • ghee 4 tablespoons
  • onion 2 medium
  • garlic pods 10
  • bay leaf 1
  • cardamom 2
  • cinnamon 1 inch
  • mace 2-3 stranda
  • turmeric powder half teaspoon
  • coriander powder 1 teaspoon
  • salt as per your taste

How to make Rajasthani laal maas

  1. Take red chillies and deseed them and soak them in hot water for 10 minutes
  2. Make a fine paste of it.
  3. In a mixing bowl combine together chicken, chilli paste,curd,turmeric powder,coriander powder,ginger garlic paste and salt and let it marinate for an hour in refrigerator
  4. Chop the onion and garlic finely and keep aside
  5. Heat ghee in deep vessel and to it add bay leaves,cardamom,cinnamon,clovesand mace.
  6. Lightly saute till fragrant and then add the onion and fry till golden.
  7. Add garlic and fry till the raw smell goes.
  8. Add the marinated chicken, kashmiri chilli powder and garam masalas and cook till ghee starts oozing out.
  9. Now add 1 cup of hot water and cook for another 10 mins.
  10. Serve hot

My Tip:

Instead of kashmiri red chilly you can also use mathania red chiilies if you can tolerate the spicyness
