Ingredients to make Dum Arvi , Pictorial Recipe

  • Arvi 200 gm
  • Tomato 2
  • Onion chopped 2
  • Garlic pods 3_4
  • Green chilli 3_5
  • yoghurt 1/2 cup
  • Ginger 1 inch
  • Hing 1/3 tsp
  • Whole Cumin seeds , whole coriander seeds , whole kalaonji seeds together 1 tsp
  • Turmeric powder 1/2 tsp
  • Cumin powder 1 tsp
  • coriander powder 1 tsp
  • chilli powder 1 tsp
  • Garam masala powder 1/3 tsp
  • Water
  • salt as per taste
  • Oil as required

How to make Dum Arvi , Pictorial Recipe

  1. Peel arvi , boil for 1 whistle , flatten them slightly
  2. Chop green chilli , ginger and garlic , make paste with little water
  3. Chop onions
  4. Heat oil , add cumin seeds , Kalaonji seeds , coriander seeds
  5. Add hing , saute for 2_3 mins
  6. Add chopped onion , saute until translucent
  7. Add ginger garlic and chilli paste
  8. Make tomato puree with water
  9. Add turmeric powder
  10. Add Cumin powder
  11. Add coriander powder
  12. Add red chilli powder , saute for 2_3 mins , add salt also
  13. In another pan add oil and shallow fry arvi in batches
  14. Next add tomato puree to the spices mixture , saute until oil separates from the masala
  15. Whisk curd
  16. Add curd to the fried masala , saute for 5_6 mins
  17. Add fried arvi
  18. Mix well with the masala
  19. Add water , when gravy turns thick , switch off gas , add garam masala
  20. Garnish with chopped coriander leaves
  21. Serve hot with rice or chapati or paratha
